Happy Spring! Or happy-what-finally-feels-like-spring! Things are finally starting to warm up and green up where I live and I am filled with joy.  For me, this means more time outside, the sun out when I get up, and no longer constantly feeling cold. It also means Easter, which my family was fortunate and able to celebrate this weekend (safe and socially distanced of course).  Everyone in my family is an avid foodie so there was plenty of new dishes to try. I personally made a delicious vegan lemon raspberry cake!

Of course I always feel a bit cooking fatigued after a big food-focused holiday weekend. I do not want to be cooking after spending so much time in the kitchen over the weekend. I would much rather just order takeout and eat cake leftovers. This recipe started as a refried bean recipe, although I wouldn’t really label it that way anymore. Like most things I cook, this recipe is easy, delicious, and perfect for meal prep. They can be enjoyed by themselves or as a side. I think these beans would also be great as a vegan sub for taco meat. I have made this recipe with pinto beans, as well.

Vegan Black Beans


  • 2 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can fire roasted tomatoes
  • 1 tsp cumin
  • ½ tsp oregano
  • 1 can black beans, drained
  • Salt and pepper

Heat olive oil in a large saucepan on medium-low. Add onions and pepper and allow to cook until veggies begin to soften. Add garlic and cook for another 2 minutes, stirring occasionally. Add tomatoes, cumin and oregano, and cook for 5 minutes or until tomato juice is almost gone. Add the beans and cook until they begin to soften, then take a wooden spoon and mash some of the beans. If the mixture begins to stick to the pan, you can add some water or veggie stock. Once almost all the liquid has cooked down, remove from the heat and add salt and pepper to taste.  Best served hot and will keep in the fridge for up to a week.
